La Matandeta

The Gálvez Baixauli family founded the Matandeta in 1991 after remodeling the farm that belonged to their grandfather Manuel Baixauli, also known as the “Matanda” (in the Valencian dialect: my batch, the order. The name comes from when the farmers would ask for the irrigation motor to be turned on to water their specific plots of land). This is a charming restaurant located in a privileged spot: La Marjal, the heart of the rice fields belonging to the Albufera Natural Park. Included in its menu are a wide variety of rice dishes, all cooked over wood fires.
