In the kitchen, Vicente Botella has skillfully and professionally taken over from Julia, the woman whose mastery of paellas first brought fame to this restaurant. Gustavo and Ernest, members of the legendary Mira family of restaurateurs, continue to run this restaurant whose rice dishes are its specialty.
