Cristóbal Bolufer and Josefa Catalá founded the Mezquida in 1982, and ever since then, this has been one of the restaurants in Xàbia where the best paellas are served. The second generation that now runs this family restaurant prepares a rice dish whose color, aroma, and flavor unite in the combustion of the vine shoot. The paellas are always served with impeccably loose grains of rice, a traditional characteristic that reminds us that we are in the province of Alicante.
