El Redolí

Pepi Montoro masterfully elaborates all the dishes, from the “all i pebres” (eel or sea bass in garlic and pepper sauce) to the paellas cooked over wood fires in an enormous cooking area constructed like a traditional Valencian hut. This precious enclave pays tribute year after year to the Valencian Paella and the “Arròs del Senyoret” (rice cooked in a seafood broth with peeled shellfish) in the event that they host for the Hostelry Association of the Isla del Palmar.
