In Hoya de Elche, we come across this restaurant, founded in 1991, whose large catering establishment can accommodate over 700 guests in its dining rooms specialized in hosting celebrations and events. Casa Carlos, a faithful follower of Alicante´s rice traditions, offers an ample variety of dishes, whose highlights are the Paella of Rabbit and Snails cooked over vine shoot and the traditional Crusted Rice. This latter dish, a delicacy of Elche, is especially important as it is considered to be the oldest and most traditional rice recipe in the entire Valencian Community.
