With Alfonso managing the kitchen and Teo directing the dining area, this fourth generation of culinary experts continues to provide the Alicante province with one of its most spectacular performances. Their secret is simply to do what they know best: to serve meals honestly, and their Paella of Rabbit and Snails cooked over vine shoot is the perfect example of this. With its millimetrically-thin layer of rice, this paella captures all of the flavor that its humble ingredients offer as Alicante´s rice par excellence. Each year, the Mira family organizes the Gastronomic Encounters whose experience is built around the grapevine as its central pillar.
